Watermelon Cocktails: Part 2  (here’s part 1 including my Watermelon Margarita recipe and how I got on this watermelon drink kick a few weeks ago.)

So, the mojito is classic Cuban cocktail made up of white rum, sugar, mint, lime and seltzer. A divine bevvie during the heat of summer for sure. I made this one because I wanted another option for those who aren’t fond of tequila (there’s often a not too pleasant story that goes along with people who fall into that group.)

This proved to be another watermelon cocktail winner. Because the watermelon is so sweet naturally, I skipped adding the simple sugar syrup. You could easily make this with any other fruit juice – like The Spicy RD’s Cantaloupe Mojito (EA posted this just days before my watermelon version, which I love because often we are on the same food “kick” at the same time! Not to mention, she has amazing recipes on her blog – all gluten-free.)

  • 3/4 cup watermelon juice (pureed and strained)
  • 5 mint leaves
  • Juice from 1/2 of a lime
  • 1.5 ounces white rum
  • 1/4 cup seltzer or sparkling water
  • Mint sprigs


  1. Pour about 2 tablespoons of watermelon juice into a glass. Add mint leaves and muddle the mint (press down with a muddler or a spoon) until the leaves are fairly bruised. Add remaining watermelon juice, lime juice and rum. Top off with seltzer and serve with a spring of mint, if desired.

Notes

I found that a large watermelon yields about 10 1/2 cups of strained watermelon juice.
